The highlight of Savart’s portfolio, the 2020 Écueil Le Mont des Chrétiens, hails from a 35-year-old southwest-facing site with vines thriving in sandy soils. Aged in 500-liter barrels, half new and the remainder used for one prior wine, it was disgorged in November 2024 with a dosage of 3.5 grams per liter. The wine opens with a deep bouquet of sesame, white flowers, beeswax and sandalwood, framed by a youthful reduction. On the palate, it is medium- to full-bodied, deep and lively, with a distinctly Burgundian character, displaying remarkable tension and vibrancy despite the warm vintage. It concludes with a long, piercingly saline finish. This is a more successful bottling than the 2019, which Savart opted to vinify in Wineglobe.
