Overview

After the lackluster 1990, things get back on track quickly with the 1988 Salon, a wine that is absolutely peaking today. From one of the all-time great vintages in Champagne the 1988 Salon exudes power and explosive intensity, with superb balance and pulsating acidity that gives the wine its drive. A host of candied lemon peel, hazelnut, smoke, licorice and anise overtones meld into the super-expressive finish. Disgorged à la volée, with no dosage.

A magnum gifted to celebrate New Years Eve 1999, so the first beverage of the new millennium. I was amazed how primal this champagne tasted. Still that steely, citrus nose with hints of pear. Takes time to open up in the glass. The palate has superb definition and balance, not quite as intense if flavour as I imagined, still giving little away at the moment. After 20 minutes the finish develops a biscuit note that lends it a little more character. Needs another five years. Tasted January 2000. By Neal Martin July 2008
